- 🧀Cheddar Cheese150g
- 🧈Butter30g
- 🌾Plain Flour30g
- 🥛Milk400ml
- 🟡Dijon Mustard1 tsp
- 🧂Saltto taste
- 🟤Nutmeg(optional)pinch
Method

Cut cauliflower into florets and boil for 5 minutes until just tender. Drain.

Melt butter in a pan, add flour and stir for 1 minute.

Gradually add milk, whisking constantly to avoid lumps.

Simmer until sauce thickens, about 3 minutes.

Stir in most of the cheese and mustard. Season.

Place cauliflower in an oven dish, pour sauce over.

Top with remaining cheese and bake at 200°C for 15 minutes.
